The perfect Summer Salad for BBQ's

This Tomato Feta Salad with Honey Mustard Vinaigrette is my favourite Summer salad. It's so easy to prepare and can easily made ahead, nothing get's soggy or weird even if you'll leave it in the fridge for a few hours. So if you're having a BBQ this summer, don't forget to try out this Salad!

The thing I love most about this salad it, it's so easy and fast to prepare, even my boyfriend who really isn't the most talented (or interested) cook, can make it without needing me to tell him what to do. So if he can do it, I'm sure your kid most definitely can do it too.

You can take what ever tomatos you like. I took the multicoloured cherry tomatos because they were on offer and I just put the fresh herbs in I had. I took chives and some of the green of spring onions. I also love parsley in it but I love parsley for everything. This really only takes 10min, depending on how many Cherry Tomatos you have to cut, so if it has to go really extra fast, opt for bigger tomatos.

All you'll need for 4 people:

Salad:

400g Cherry Tomatos (or any tomatos you like)

100g Feta

fresh herbs like Chives, Parsley, green of spring onions

Vinaigrette:

4 tbsp Olive Oil

3 tbsp White Wine Vinegar

1 tbsp Plain Joghurt (optional)

2 tsp Dijon Mustard

1 tsp Honey

1 clove of garlic (pressed)

salt, pepper for taste

If you have Cherry Tomatos, cut them in half and crumble the feta over it, don't cut it, just crumble it with your hand (just take one hand, you'll need to wash it afterwards, it's a little messy tbh). To be a little faster, I always cut my fresh herbs with a kitchen sicissors only used for this. Prepare the vinagrette in a seperate bowl or cup. Mix everything really well.
